Before we start making omelets, let's remember that eggs are temperamental. They must be fresh, preferably from the organic market, and be kept cold until cooking. If they are not kept cold enough, the whites won’t form properly. The yolks will also break down too quickly and become runny. This causes your omelets to look oddly colored. If you're going to cook them immediately, it is best if the eggs are still warm.

You might also try separating the egg before adding to the pan. The yolk and white should not be mixed together as this can cause the omelet's curdle.

The egg can burn if it is placed directly on the stovetop. Instead, heat the egg in a microwave for 10 seconds and then place it in a pan. The microwave heat will cook the egg just right without making it too hot.
